Our NYStrip uses 14oz of prime cut New York Strip steak from our local butcher Clause Meats in good ol Bellingham, Washington the last state before stepping over into Canada and home to the green beautiful forests we call home. We plate steak at Rifugio’s in many ways but this was one of the most fun. Cutting it so the customer does not have to struggle as they are speaking to others and unstacking the tower and dipping it into the sauce that has gathered at the base. This was last years photo and we are now onto using a 16oz Duck breast from Foods In Season

Well I am off to the kitchen to make today’s delights.
