The Feast of the Seven Fishes... a Southern Italian celebration that is very traditional and important with our culture. We choose this to end our series of dinner events. The display's and food were delightful. The guests were warm and welcoming. Some old customer and some new. A perfect combination.
A Word on Food and expectations from the Chef
A Chef often frets about certain dishes in which he thinks will or will not work. The most unexpected results often happen. The Shrimp Timbale (a piccolo tart) was met with enjoyment. Something I was not confident in. The Dessert something a received a lot of "why are you doing that?" or "Salmon and Tomato in Desert?!!!" People don't do that. Well this was one of the highlights of the dinner. The Conifer Syrup, Pizzelle cone, Sun Dried Tomato custard with Candied Salmon all paired well and ended the feast with a hit. Doing all protein for a seven course dish is a challenge but was exciting. We cannot wait to next year. I am glad I doing something out of the box and am supported by welcoming guests. Our goal is to challenge and to invite people to try new things.
