A LITTLE HISTORY AND LEGEND
There are a lot of stories for Saint Francis but the one that stands out for me is personal. I still have relatives in Rome and my grandfather was from Sicily. They still have a family farm in a little town called Santa Lucie south of Messina. When my Mother and Father took me to Italy when I was 16 years of age we went to Saint Francis of Assisi. I have to tell you that it was one of the most peaceful moments and beautiful I have had. So Saint Francis is the Patron Saint of animals and the environment. In light of this all courses will be simple delicious peasant food made from vegetables and fruit at the peak of season and of grains. No meat or fish will be served during this Feast. However, it must be stated that during the Christmas Feast Saint Francis encouraged his monks to feast lavishly in celebration of Christ and meat was served.

freshly ground dent corn . Ferndale Farmstead cheese . heavy cream . fresh herbs
SQUASH SQUASH and BEANS
a selection of local squash cubed, mashed , fried, with beans and fruit
VEGETABLE TERRINE
fresh seasonal vegetables with local roots and tubers
PASTA PREMAVARA
Fresh local pasta . tossed in a vegetable cream .
